DESCRIPTION

This qualification reflects the role of commercial cooks who have a supervisory or team leading role in the kitchen. They operate independently or with limited guidance from others and use discretion to solve non-routine problems. This qualification provides a pathway to work in organisations such as restaurants, hotels, clubs, pubs, cafes and coffee shops, or to run a small business in these sectors.

Our program is meticulously designed to ensure that students are not only able to prepare a variety of food types, including appetisers, salads, fish, shellfish, meats, poultry, and desserts, but also meet the stringent quality standards expected in the industry. This includes mastering the creation of essential stocks, sauces, and soups, as well as preparing vegetables, fruits, eggs, and farinaceous dishes.

At both our café and all approved work placement locations, our faculty closely observes and evaluates the students’ practices. This direct oversight ensures that each student not only applies their learning effectively but also receives real-time feedback and guidance, enhancing their skills and preparing them for the demands of the culinary world.

That’s why we offer a comprehensive work-based training program that integrates rigorous academic learning with practical workplace experience, forming a core component of our culinary courses.

A Thriving Learning Environment in the Heart of Perth

Nestled in the vibrant heart of Perth CBD, GCA boasts the prominent Allure Café that serves not only as a bustling eatery but also as a dynamic learning platform for our students. This facility provides an invaluable opportunity for trainees to engage in kitchen supervision and manage time-critical food preparation tasks under real-world pressures. Students at GCA are immersed in a practical environment where they learn to navigate the fast-paced nature of culinary professions, from managing orders to delivering exquisite dishes to patrons.

Work Placement

Our curriculum is designed to ensure that every student gains hands-on experience through a mandatory work placement component, which involves a minimum of 48 complete food service periods (shifts). These placements are hosted by a diverse array of hospitality and catering organisations, including upscale restaurants, restaurants/cafes, healthcare establishments, and more.

Students are encouraged and supported to select their own work placements, empowering them to steer their learning journey according to their career aspirations and interests. Whether it’s a café, a large catering event, or even onboard catering services, our students have the flexibility to explore various sectors within the industry.

Please note that this unit, SITHCCC043 Work effectively as a cook, includes a compulsory work placement component. During this placement, you must have the opportunity to engage in the following activities:

  • Complete a minimum of 48 service periods in a commercial kitchen, covering breakfast, dinner, and lunch.
  • Cook and present items for various menu styles, including à la carte, set menu, buffet, and cyclical.
  • Prepare and serve items from a diverse range of food types, ensuring they meet industry and organisational quality standards.

While students have the flexibility to choose their work placement, it is imperative that the selected placement meets all the criteria outlined above.

LOCATIONS

We have two college campuses located in East Perth, which are directly behind each other at;

  • 176 Wellington Street, East Perth, Western Australia, Australia 6004.
  • 21 Moore Street, East Perth, Western Australia, Australia 6004.

DELIVERY METHOD

Classes are scheduled for two days per week and a self-paced supervised training as below. Full-time studies require international students to attend a minimum of twenty scheduled course contact hours per week. GCA provides the below.

  • Face to face classroom based learning and in commercial training kitchen (Simulated Industry environment) : 7:45am to 4:30pm.
  • Self-paced supervised training: 4:30pm to 6:30pm.

ENTRY REQUIREMENTS

  • Nil

GCA INTERNATIONAL STUDENT ADMISSION REQUIREMENTS

  • Minimum of 18 years of age.
  • Successful completion of Year 10 or equivalent.
  • Commercial Cookery Pathway student need successful completion of SIT30821 Certificate III in Commercial Cookery
  • GCA English test upon enrolment for direct entry students.
